It's Caribbean Food Week!......{Jerk Chicken Wraps}









Did you know that this week is Caribbean food week? That's right, it runs 24-31 August culminating in the world-famous Notting Hill Carnival. When Grace Foods offered me the chance top create some yummy recipes using their wide selection of Caribbean products I couldn't wait to get involved. Caribbean food is something I have tried on a few occasions but don't really cook myself so I was up for the challenge. 


For my first recipe I decided to create a really healthy but incredibly tasty chicken dish using the Dunns River Jerk Season that I was sent. I love Jerk Chicken and when the chicken was cooked on my grill plate it went all smoky and delicious - the marinade would work so well on chicken legs and wings for a BBQ. The spiciness of the chicken is cooled down by the mango and lime juice and you basically just have a taste sensation in your mouth! H absolutely loved these and if you marinade your chicken overnight they literally take 10-15 minutes to cook and get onto the plate so they are great as an after work quick and easy dinner!



Jerk Chicken Wraps with Mango Salsa  


300g chicken (breast of thigh), sliced into large strips 

for the marinade:
1 tbsp Dunns River Jerk Seasoning 
3 spring onions roughly chopped
2 cloves garlic, peeled 
inch of fresh ginger, peeled
1 dried ancho chilli or one fresh red chilli
2 tbsp coconut oil
2 tbsp coconut sugar (or brown sugar will work)
1 tbsp algarve syrup (treacle would also work)
s&p
juice of 1 lime 

For mango salsa:
1 mango, peeled and cubed 
handful coriander, chopped 
juice of 1 lime 

to serve:
iceberg lettuce, shredded 
tortillas   

place all of the ingredients for the marinade in a blender and blend until smooth. pour over the chicken and mix until coated. cover and place in fridge - ideally overnight. to make the salsa combine the mango with the coriander and lime juice. warm a grill pan and cook off the chicken - let it get a bit charred as it tastes even better this way. in a separate pan warm up the tortilla. to serve place a bed of lettuce, add on the chicken and top with the salsa. 
Simple but full of  flavours of the Caribbean sunshine!

A summer soup........{Watercress Soup}








I get so into soups in the summer - so fresh and light and easy! My favourite kind of summer soup is watercress! British watercress is just wonderful and I like to use it as much as possible whilst it is in season. This soup is a really simple and tasty way to highlight the peppery tones of this versatile salad leaf. I’ve kept this one a little bit chunky but you can always blend it until it’s really smooth (and bright green in colour)! Parmesan crisps are so simple but look great – your guests are bound to be impressed when you serve them! You can also serve this hot or cold - its up to you!


Watercress Soup with Parmesan Crisps


1 tbsp unsalted butter
300g watercress, chopped (make sure the stalks are finely chopped and the leaves just roughly chopped)
2 leeks, finely chopped
3 Cyprus potatoes (or other baby potatoes) finely chopped
 500ml chicken or vegetable stock 
Double cream 


75g Parmigiano Reggiano, grated 


For the parmesan crisps – line a baking tray with grease proof paper. Take the grated cheese and make rounded mounds (they don’t spread too much so you can make the circles quite close together). Pop in the oven (200°C) for 10 minutes or until they are nicely golden. Allow to cool before serving. 
For the soup - Melt the butter and add in the leek and potatoes, cook until soft and the leeks are going translucent. Add in the watercress and stock and simmer for around 10 minutes. Take off the heat and then blend until you have the consistency you like. Add in a splash of cream and season. Serve with a swirl of cream and with the parmesan crisps on the side.

A taste of Italy from Whitstable.......{Spaghetti alla Vongole}













I wax lyrical about Whitstable so much on this blog but then I love it so much. Last Saturday we wondered down to the fish market and I decided against mussels and instead opted for some fresh clams - a bit pricier but then you need less to make a rather wonderful Italian meal. This took me right back to summer holidays in Italy although it was March on the Kentish coast. I don't eat pasta very much at all these days but when I do, it has to be worth it - full of flavour and not to heavy. Don't be scared of shellfish when you are cooking clams they tell you when they are ready to eat as their shells open - makes it so simple!



Spaghetti alla Vongole

750g fresh clams (approx)
3 cloves garlic, finely chopped
1/2 red chilli, finely chopped
20g butter
olive oil
150ml white wine
zest and juice 1/2 lemon
handful fresh parsley, roughly chopped
enough spaghetti / linguine for 2 people
cook the spaghetti according to instructions, you want it slightly al-dente. warm the butter and olive oil in a pan and add the garlic and chilli. once it has softened add in the wine, when it starts to simmer, ramp up the heat, add in the clams and put the lid on the pan. shake a few times as it cooks. the clams will take around 4-5 minutes, once the shells have opened. discard all clams that haven't opened. add in the pasta, parsley, lemon juice and zest and toss them all together. season and serve. It's really that simple but tastes a million dollars!

When fish is this fresh........{Grilled Prawns)













We spent my birthday weekend in one of my favourite places - Whitstable. One of the things I love about it is the fresh seafood market. Often one of the evenings of the weekend we will forgo the many places to eat and just buy some fresh fish from the market and go home and cook it.

We were spoilt for choice at the market this week and after a lot of umming and ahhing I picked up some lovely fresh large prawns. You could do so much with these BUT I can't help thinking when fish is this fresh you are best keeping it really simple. I went for a really simple but fragrant butter made with juicy garlic and lots of fresh parsley which soaked into the prawns under the grill. We lingered over them with a fresh glass of prosecco and some fresh baked bread from one of the deli's. There's nothing better in life really.  

Grilled Prawns with Garlic & Parsley Butter

10 large raw prawns 
50g good quality butter
1/2 shallot, finely chopped 
3 cloves garlic, finely chopped 
handful parsley, finely chopped 
1 tbsp olive oil

if you wish take the heads of the prawns and then de-vein them and then butterfly them so they lie flat on the grill. mix all of the other ingredients together and then dollop it in the prawns. place under the grill for around 10-15 minutes until the prawns are nice and pink and cooked through. How easy is that?!

Healthy Weekday Meal #6........{Spicy Lentils and Baked Cod}




This dinner came about by using up things that were in my cupboard, fridge and freezer. And boy were they tasty. A healthy and nutritious dinner that really didn't take long to throw together. I share the recipe so you can bung it together yourself! Don't feel limited by the cod you could serve the lentils with salmon, chicken, pork etc the options are limitless!  





Spicy Lentils and Baked Cod


250g dried green lentils, rinsed and soaked overnight
1 TBSP coconut oil
1 red onion, finely chopped 
1/2 green pepper, diced
2 cloves garlic, finely chopped 
1 thumb sized piece of ginger, grated 
handful of fresh coriander, chopped  
2 TSP dried red chillies 
1 TSP cumin
1/2 TSP chilli powder 
3 large tomatoes, diced 
vegetable / chicken stock 
2 fillets of cod (or however many you need)
slices of fresh lemon / lime 

melt your coconut oil in a pan and then add in the onions. once they have softened add in the garlic, ginger, chilli flakes and peppers. after a couple of minutes add in the lentils, the remaining spices and the coriander and make sure that the lentils are coated in all the flavours. cover with stock and then simmer for 10 minutes. Add in the tomatoes and season. continue to simmer until the lentils have soften, although i do like them to retain a bit of bite - personal preferences people! in the meantime quite simply season your cod and bake in foil/greaseproof paper parcel in the oven for 20minutes or so. Serve the cod on the lentils and sprinkle with a bit of coriander and a squeeze of lemon or lime juice! 


These lentils taste even better the next day - I had them for my dinner with a spoonful of Greek yoghurt. Yummy!

Healthy Weekday Meal #5..........{Creamy Roasted Cauliflower with Courgette ribbons}




I need a Spiralizer in my life. I'm kind of sick of using my peeler to make ribbons and I'm sick of having zoodle envy, except in the UK would it be coodle envy?! This recipe is kicking around the internet quite a lot at the moment and I am jumping on the band wagon with my version! Roasted cauliflower makes this dish a bit more filling and the yoghurt dressing really compliments the dish perfectly. Healthy and very satisfying with a pretty unique selection of ingredients - be prepared to be surprised!


Creamy Roasted Cauliflower and Prosciutto with Courgette Ribbons   

1 small head cauliflower, cut into florets
extra virgin olive oil
1/2 tsp smoked paprika
5 slices prosciutto, roughly torn
1 banana shallot, chopped
3 cloves garlic, crushed 
pinch red chilli flakes 
3 - 4 courgettes, cut in to half and then peeled into ribbons (or use your spiralizer to make zoodles)
3 tbsp 0 fat greek yoghurt
zest half lemon 
1 tbsp lemon juice
1 tsp djion mustard
1 1/2 tbsp grated parmesan

Toss the cauliflower in a bowl and toss with a tbsp of oil, lay on a baking tray and season with S&P and paprika. roast in the oven for about 20 - 25 minutes until golden brown (i left mine in a little too long!) in separate bowl combine yoghurt, lemon zest and juice, parmesan and mustard and whisk together. season. add a tiny bit of oil in a pan and cook off the prosciutto until it has turned a deep red colour. remove from pan and then add in the shallots, garlic, and chilli flakes and when they become fragrant add in the courgette ribbons. let the courgette cook until al-dente (about 3 minutes) and then remove heat. add the prosciutto and cauliflower and then stir in the dressing, i do this a bit at a time as you may not need it all. serve

When Paella rice isn't an option......{Wild Rice Paella}












Because paella rice really isn't an option for me. Complex carbs only which is fine I like sweet potato and brown rice. I went for another run yesterday night which was the fourth day of exercise in a row (probably a record for me) and my body was in need of some serious carbs. Now I'm not saying this is the healthiest dish in town - the chorizo sees to that (and paella without chorizo makes me sad) BUT the use of brown and red wild rice, soya beans and extra veg makes it that bit better for you. I'm sorry I'm a bit scatty with my measurements I do tend to just throw things in a pan!




Wild Rice Paella

1 cup red and brown wild rice, uncooked
2 banana shallots, diced 
100g chorizo, sliced into £1 coin thickness
1/2 red chilli, finely sliced
2 cloves garlic, finely chopped
1 TSP dried red chillies
5 mushrooms, cubed 
1 TSP paprika
pinch saffron
splash white wine or brandy
chicken stock, fresh is best or from a stock pot
couple of handfuls of  frozen soya beans 
handful frozen peas
10 raw prawns 
1 tomato, cubed

put the chorizo in a heavy based shallow pan, and cook for 5 minutes until the oils are released and they start to crisp up slightly. add in the chilli, garlic and shallots and stir until softened. add in the dried chilli, paprika, mushrooms, and saffron. stir for a few minutes then add in the rice and coat it in the pan oils. splash in some wine and cook it off and the add in a good amount of stock, i covered the rice and a good 2 1/2 inches more. leave on a moderate and keep an eye on it but don't stir. when the stock is almost all absorbed check the rice - if it's still hard add some more stock if not then add in the soya beans, peas, prawns and tomato and cover the pan. cook on low for another 5-10 minutes or so and then everything should be cooked nicely. serve.

healthy Weekday Meal #4 ............{Halloumi with cous cous and kale}













A hit is how I describe this dish. Went down very well in our household and H appreciated the extra protein in the form of chorizo in his version. I didn't miss the chorizo and found this dish really nice and filling. Its  very quick and easy to make which makes it perfect for an evening meal after a long day at work and you could also substitute the couscous for quinona if you so wish, it works just as well.  








Halloumi with Cous Cous and Kale


block of halloumi cut into slices 
around 50g of chorizo, sliced  *OPTIONAL*
50g couscous, made according to instructions (i make mine with stock)
good few handfuls kale, as much as you like!
mustard vinaigrette - i make mine - few glugs of OO, 1 tbsp cider vinegar, 1 clove garlic chopped, 1 tbsp mustard (Dijon or wholegrain) a squeeze of lemon juice and some S&P all shaken up together. but use shop bought if you want 

steam your kale for just a few minutes until the leaves have gone slightly darker but it's not soggy. drain and let cool down slightly. take a pan, if you are cooking the chorizo add them to the pan and cook off for a 5 or so minutes then remove them from the pan. add in the halloumi and then cook that, turning occasionally - if you have used the chorizo then it will just cook in the oils released if not add a tiny bit of oil to the pan. toss the kale, cous cous and a bit of dressing together and place in pan. add the halloumi and chorizo to the top and serve.

Healthy Weekday Meal #3...........{Chicken Puttanesca}




Many moons ago when I wasn't dieting I blogged a favourite pasta recipe Puttanesca Spaghetti. Now as I am avoiding processed foods and my diet is pretty low carb I wanted to find an alternative to this favourite sauce of mine. Step in courgette (zucchini) ribbons to replace the pasta and a chicken breast to bulk up the dish and add lots of protein. I loved it, the heady flavours kid you in to thinking you are eating a much richer dish and the courgette compliments the sauce really well. Its going on the list of my favourite easy and healthy weekday meals.


Chicken Puttanesca 

Inspiration for this recipe came from BBC Good Food (here) and Supergolden Bakes (here)

2 chicken breasts 
1 small onion, diced
50g anchovy fillets, drained and then chopped
2 cloves of garlic, chopped 
1 tbsp dried chilli flakes
400g tinned tomatoes
1 large tomato, diced
2 tbsp pitted black olives
2 tsp small capers
olive oil
small handful of parsley, chopped

1 courgette
olive oil

brown the chicken in a pan with a little olive oil. remove and de-glaze the pan with a little water. add a splash more olive oil and then the onion, garlic and anchovies, cook until the onions are translucent. stir in the fresh tomato, tinned tomatoes and then fill the tin halfway with water and add that. sprinkle in a little sugar to help sweeten the tomatoes. bring the sauce to the boil and then turn down the pan to a simmer. add the olives and the capers and season well. place the chicken in the pan and cook covered for 20 mins and then uncovered for 10 mins so the sauce thickens up. sprinkle with  parsley. 
for the courgette, use a potato peeler to get long slices of ribbon the length of the whole courgette. I find one courgette for every 2 people works, add a tsp olive oil to a pan and a dash of water and cook the courgette - it only takes a few minutes.
serve the chicken and sauce over the courgette ribbons

Healthy Weekday Meal #1..............{Moroccan Turkey Meatballs with cous cous}









So to shift those pounds that I speak about in my new years resolutions post, I have started on the JuicePlus+ diet where basically you have meal replacement shakes for 2 meals a day with a "clean and lean" meal in the evening... gradually you come of the shakes and the idea is that change your eating habits as you are learning to adapt a more clean way of eating. So I am 2 weeks into this plan and I have already lost 7lbs and I am enjoying coming up with healthy and tasty recipes.

This recipe is great as it packs in loads of vegetables in to the sauce, it's really flavoursome and it turns what would be a rich dish into something much lighter. you could make this dish would pork or beef mince balls but for optimum healthiness I went for turkey. The cous cous is made how i like it which is to always make it with stock but again this is entirely to my tastes...





Moroccan Turkey Meatballs with Cous Cous


250g turkey mince, rolled into around 12 balls (or you can just buy a pack of ready made turkey meatballs)
1 onion, diced 
1/2 red onion, diced 
2 cloves garlic, finely chopped or minced 
1 tsp dried red chilli flakes 
1 carrot, diced
1/2 courgette, diced 
3 large mushrooms, diced
1 tbsp Ras el hanout
1/2 tsp cinnamon
sprinkle of cumin 
2 large tomatoes chopped 
400g chopped tomato (or you could us passatta)
1 dtsp agave syrup (if you don't have this use honey)
olive oil 

125g cous cous 
1/2 stock cube (optional)
1 tbsp sundried tomatoes, chopped
1 dsp sundried tomato oil (from the jar)

put a little olive oil in the pan and then brown of your meatballs - don't worry if they are a little pink in the middle you are going to cook them again a bit later. remove the meatballs and then put the onions in the pan - i tend to add a bit of water here to help soften them rather than more oil. once they have softened add in the garlic and chilli flakes and stir until the garlic becomes fragrant. to the pan add the carrot, courgette and mushrooms along with the remaining spices. after 10 minutes or so add in the tomatoes, 300ml water and the agave syrup. season well. blend the sauce until it becomes smooth(ish) bring the pan to the boil and then drop in the meatballs making sure they are almost submerged in the simmering sauce. turn the pan down low and cover with lid. cook for around 20 minutes covered and 10 minutes uncovered at the end. whilst the meatballs are cooking away make the cous cous however you prefer - i just cover the stock and cous cous with boiling water, put a plate over the bowl so it steams then after 5 minutes of so I fluff it up and add the oil and sun dried tomatoes. serve the meatballs over the cous cous.

An easy option.....{fish tacos with avocado and corn salsa}









Ah this blog of mine, how I have neglected you. I can only blame impending Christmas and so much going on at work. Still, Christmas shopping is nearly done and I'm looking forward to two weeks of work soon! Will be good to rest.

When time is short we turn to tacos a lot in our household. This is a favourite which is really easy and made up of ingredients I always tend to have in the kitchen!

Fish Tacos with Avocado and Corn salsa 

fish, cooked - I used just some breaded fish and cut it in to pieces but I have used steamed salmon and baked cod on occasion (depending on healthy I want to be)
tin of sweetcorn, drained
2 tomatoes, chopped
green chilli, finely chopped
1/2 red onion, diced 
2 avocados, diced
small handful of coriander, chopped 
splash of olive oil
juice of a lime 
wholewheat tortillas 

put corn in a dry pan and cook over heat until the corn is charred, combine all the the other ingredients in a bowl and season. add in the corn and taste - you may want to add more lime. take your cooked fish and lay on a tortilla that has been warmed and add on a healthy amount of the salsa. Devour. 

you can add some cheese if you so wish and I quite often make the salsa minus the sweetcorn.

When One Raids the Contents of Ones Fridge......... {Spanish Wild Rice}




The other day was one of those days when I hadn't planned what we were going to eat, I had no idea what I wanted us to eat and I hadn't gone to the shop to buy anything to eat so I just opened the fridge and cupboard and cobbled something together. I like cooking like that as I'm a firm believer that if you trust your experience of flavours, textures and ingredients there's always something that can be made from not much at all and as a budding cook its the best way to learn. This was a sort of combination of a basque and a paella and it tasted wonderful; the oil for the chorizo and the peppers delicately flavouring the nutty rice. I had to blog it as H loved it so much and I need to remember the recipe....






Spanish Wild Rice  

150g Chorizo, sliced in to circles size of pound coin 
one chicken breast cut into chunks 
one large onion, sliced
2 cloves garlic, finely chopped 
1/2 orange pepper, sliced
approx 200g cooked wild rice 
200ml chicken stock
100ml white wine 
1 TBSP tomato puree 
couple handfuls frozen peas
S&P


cook the chorizo in the pan, remove with slotted spoon. add chicken and cook in the chorizo oil, one cooked through and golden brown remove, add onion garlic and pepper to pan and cook until soften. add in the chorizo and chicken with tomato puree, stock and wine cook off for a couple of minutes before adding rice and frozen peas, season and transfer to oven proof dish and place in oven 200oC for approx 30-40minutes until the liquid is absorbed and the dish is piping hot.

Fish in Paper........ {Fish en Papillote}











It's a funny thing when people say to me that they think cooking fish is laborious and a pain. Many a friend of mine will turn their nose up at cooking fish but to them I say "try this dish, it's simple, healthy and tastes delicious"

Cooking en papillote basically refers to the parcel you cook it in - this is a French dish and it's basically a parcel encasing the fish and vegetables which then steam cook in the oven. Mmmmm so delicious. You can be adventurous on what veg you want to use - celeriac and fennel as well as cherry tomatoes work particularly well. You don't have to make my simple creme fraiche sauce, often I will just use a bit of white wine which works just as well.

The best thing is that this dish takes very little prep and is quick to cook - a fish supper couldn't be simpler but at the same time its a pretty fancy way of cooking so you could serve it at a dinner party to much fanfare and no one would ever know - you're welcome. 




Fish en Papillote

2 fillets of halibut, or you can use any white fish plus salmon is good too
1 potato very thinly sliced
1 carrot, thinly sliced batons
1 leek, thinly sliced
4 TBSP creme fraiche
4 TBSP dry white wine
zest half lemon
2 bay leaves
S&P

Mix the creme fraiche, wine and lemon zest in a small bowl,  season. take a piece of grease proof paper and create 1 or two layers of the potato - I often add a couple of bits of butter in between to help cooking. season. layer on the leek and carrot, a bay leave and a spoonful of the sauce. place fish on top with another spoonful of sauce and season again. 







fold the grease proof paper loosely and then tuck in the sides to create a parcel (see photos). 






Cook at 200oC for approx 25mins. when out of oven make a small cut in the top so that the steam escapes and leave for a couple of minutes before serving. I just serve these in the parcel as I like the rustic look but feel free to serve nicely on the plate.
